INGREDIENTS
- 600 g flour, twice-ground variety
- 200 g flour, Senatore Cappelli variety
- 600 g water, more or less
- 15 g salt
- 150 g sourdough
Knead for at least 20-25 min. Form the loaves and let rise for 24 hours. Heat the oven to 280°C and bake for 45 min.
