Bread

 INGREDIENTS

  • 600 g flour, twice-ground variety
  • 200 g flour, Senatore Cappelli variety
  • 600 g water, more or less
  • 15 g salt
  • 150 g sourdough

 

Knead for at least 20-25 min. Form the loaves and let rise for 24 hours. Heat the oven to 280°C and bake for 45 min.
